Settle an internal debate


I have a certain (awesome) college friend coming to dinner tomorrow night and I am trying to pick out something delicious to make!  I am leaning toward 2 types of enchiladas- corn and black bean (aka vegetarian) and ground beef with a red sauce, but am pretty tempted by these two other options…

My vote is tainted: I haven’t had good Mexican…I haven’t had BAD Mexican…in so long that the thought of real enchiladas by a real Californian who knows what they’re supposed to taste like (even if she is Italian!), is just mouth watering. The pizza sounds too heavy and I’ve had so much pasta lately I have pasta burnout. I’m ready to drive up to NYC myself just to have some! 🙂

    • I will have to make you some enchiladas the next time I see you! There seem to be decently good ingredients here, and my mom has a GREAT method for making awesome enchiladas 🙂
